Vegan Meals

I'll be sharing vegan meal ideas on this page.  Over time, I will add more items.  I tend to make my meals as simple as possible.  I've seen so many recipes online that say they are keeping things simple, yet there are 25 ingredients needed to make the receipt.  Feel free to modify these receipes as the way they are presented to you have been modified by me (to be as simple yet still tasty, as possible)!

By the way, my recipes are sorted by my perceived level of difficulty, per below:
1 = most easy
5 = neutral
10 = most difficult

I also list the number of ingredients first, with the list of ingredients (of course), directions, and a picture of my final product.  Enjoy 😃

1.  Buffalo ranch 'chicken' tacos.  Level of difficulty: 1 (out of 10)

This recipe is soooo, so easy!

6 Ingredients: 
1 head of cauliflower
Your favorite buffalo sauce
Romaine
Avocado
Tortilla
Low fat ranch dressing

Directions: Set oven to 350 degrees while you cut up cauliflower into bite sized pieces.  Add some sauce to taste and bake for 30-45 minutes or until tender, stirring halfway through cooking time.  Warm up tortillas, cut up avocado, and shred romaine while cauliflower finishes baking.  Remove cauliflower from oven and top with more sauce if you'd like.  Add cauliflower inside a warmed tortilla, with romaine and avocado.  Top with low fat ranch dressing to finish.

Buffalo Ranch "Chicken" Tacos


2.  Beefless Tacos.  Level of difficulty: 3

This recipe gets a 3 mostly because of the rice... It takes some practice to get that down!

8 Ingredients:
Beyond Meat Beyond Beef Crumbles Feisty
Corn Tortillas
Serrano Pepper, sliced
Tomato, diced
Jasmine Rice
Cilantro
Lime
Avocado

Directions: Heat up the beef crumbles on the stove.  Add any stir ins you'd like.  I added diced tomato and sliced Serrano pepper.  While cooking the 'beef', heat up corn tortillas and make the rice according to the package directions for the rice you selected.  When the 'beef' is done and the rice is done, make your tacos!  Top rice with cilantro to taste and a splash of lime.  Serve avocado on the side or in your taco (up to you!).




3.  Chickpea Curry.  Level of difficulty: 6

This recipe gets a 6 on level of difficulty only because it does take longer than other recipes and does require quite a few ingredients compared to my more simple recipes... update to come.
